Lemon Flake Cake Recipe

This lemon flake cake recipe always makes me think of summer! And who doesn’t need a little bit of summer in the middle of the winter?!

This recipe is light and full of flavor and one of our favorites. We could just sit and eat the whole cake in one sitting. But you guessed it, we shouldn’t or cant should I say 🙂 This cake recipe is one of the easiest cakes that I make.

The Lemon Flake Cake recipe is just so simple.

The ingredients are as follows:

  • 1 box of Betty Crocker Super Moist Yellow Cake Mix
  • Ingredients need for the cake mix (stated on the back of the box)
  • Powder Sugar (Your favorite brand)
  • Lemon Juice
  • Melted Butter
  • Water

Preheat your oven as directed on cake box to 350 degrees. Follow the instructions on the back of the Betty Crocker box for preparing your cake mix and baking.

When your cake is almost done you want to mix together the powder sugar, lemon juice, melted butter, and water. Stir really well, I use a fork so that I can cut up the powder sugar chunks. There will be powder sugar flakes but try to get them all smashed and mixed together.

Once your cake is baked and done pull it out of the oven and place it on a hot pad. While the cake is hot use a fork to poke holes in the top of the cake.

When you are done poking the holes in the cake pour your lemon juice mixture over the entire top of the cake. The mixture will soak down into the holes and the side of the cake pan, this is good!! This is what you want 🙂 This process is what gives the cake its great flavor.

Yes there will still be flakes of powder sugar on top of the cake, but this gives the cake recipe the sweet taste. I think its hence the “flake” of the cake.

Let the cake sit and cool off then just slice, serve and enjoy and viola your Lemon Flake Cake Recipe is done! Enjoy the flavor of summer! 🙂

  1. Does anyone know if it would work for cupcakes? I’ll be 75 and my daughter will be 40 on the same day. We can’t get together, so we thought we would make them while we zoom. Cupcakes? Good idea or not?

    • Hi Dorothy! I have not used this recipe for cupcakes before, and I am a huge cupcake fan! The lemon flake cake is somewhat heavy due to the lemon flavoring liquid that you pour on top of the cake so I would not think it would work so well for cupcakes. As cupcakes are usually light.
